Yellow Tea belongs to the group of teas with the oldest tradition. After rolling the freshly harvested tea leaves they are packed into cloth or paper and then they rest for a period of time. Chemical processes which are solely caused by humidity and heat have the effect that the structure of the leaves changes and the tea develops its typical characteristics. The taste of the Yellow Tea is comparable to Green Tea but is considerably milder.
